Products:
1 large egg
1 Tbsp. canola oil
1 Tbsp. honey
3 Tbsp plain regular yogurt
1 1/2 Tbsp. sugar
1/2 cup all purpose flour
1 tsp. baking powder
1 tsp. 100% natural green tea powder (matcha powder)
Anko (sweet red bean paste) for garnish (optional)


Making:
Cover the lid with kitchen towel. This will prevent the water formed from condensation to drop on the steamed cakes. Place four empty ramekins (these glass ramekins are from Pyrex) in a frying pan and pour water into the frying pan to come halfway up the sides of the ramekins (measure the amount of water for next time). Then take out the ramekins, cover the pan with the lid, and slowly bring water to a boil. Place a cupcake liner in the ramekins. In a medium bowl, add the egg and oil and whisk well. Add the honey and yogurt and mix well. Add the sugar and mix thoroughly. Sift the flour and baking powder together and add in the egg mixture. Add the matcha powder and fold until powder is well incorporated into the batter. Divide and pour the mixture into four cupcake liners. When the water is boiling, turn the heat to medium and gently place the glass ramekins inside the pan. Quickly cover with the lid and steam for 12-14 minutes (when you overcook, the steamed cake get hard, so be careful). To test if the steam cake is ready, insert a skewer into the cake and see if it comes out clean without wet batter. If it's clean, remove the ramekins from the pan. Serve warm or at room temperature and put sweetened red bean paste (anko) on the side.
